The Hashbrowns, That’s Why
I adore Cracker Barrel, but the reality is… I only visit for the hashbrown casserole. That’s all. Just the hashbrowns, folks.

A friend of mine shared her take on that delicious, oh so creamy and cheesy Hashbrown Casserole with me, and WOW! Tender shredded hash browns enveloped in a rich and creamy cheese sauce, topped with additional cheese and baked until hot and bubbly!

This is an ideal breakfast casserole for any holiday morning or simply when you’re gathering the family for a delightful breakfast or brunch. It also serves as a fantastic side dish for Crispy Oven Parmesan Chicken or even alongside a Ranch 7 Layer Salad for lunch!

Better Than the Original
Numerous recipes exist for this cheesy casserole, but this is the one I’ve discovered to be the closest! This hashbrown casserole is prepared with condensed cream of chicken soup. I’ve also made it using cream of cheddar soup if you can locate it. Both options work perfectly in this recipe! While I’ve encountered a version of hashbrown casserole without sour cream, I definitely prefer it with sour cream, as it adds a touch of creaminess and tang to the dish. Since this is a copycat hashbrown casserole recipe, my ingredient list is inevitably different from the original, but the flavor is just like my favorite Cracker Barrel Hashbrown Casserole (in fact, it’s even BETTER in my opinion)!





INGREDIENTS
  • shredded frozen hash browns
  • 1/4 c. melted butter
  • 1 can cream of mushroom soup
  • 8 oz. grated cheddar cheese
  • 1 (8 oz.) container sour cream
  • 1/2 tsp. salt
  • 1 sm. onion, chopped

INSTRUCTIONS
Place thawed potatoes in 9"x13" baking dish. Mix together next 6 ingredients. Pour over potatoes. Bake, uncovered at 350 degrees for 45 minutes. Casserole can be put together night before.
